When I make a salad, I like to incorporate all kinds of toppings so I’m not just eating lettuce.
There were a couple of occasions when my boyfriend and I were invited to a dinner party and we offered to make a salad… between adding things that we both liked and tweaking the ingredients, this masterpiece was born. Now, it’s pretty much our go-to dish to take to parties.
Ingredients (This amount feeds around 10 people):
1 bag romaine / Italian blend lettuce
1 bag arugula
1 pouch Trader Joe’s San Marzano tomatoes
1/2 cup crumbled bleu cheese (this can either be increased or decreased depending on your taste)
1 package of Trader Joe’s pre-diced pancetta
1 bag of Trader Joe’s candied pecans (ok, we may have snacked on a few of these during prep)
We haven’t used the same dressing twice, and to be honest, it doesn’t really need a dressing. My favorite so far was a peppercorn ranch lightly tossed through the entire salad.
Get a large bowl or serving platter. Add the lettuce and arugula together and mix them up. Wash the tomatoes and slice them in half. (or smaller if you prefer) Add tomatoes to the top of the lettuce mixture. Sprinkle crumbled bleu. Roughly chop the pecans and add them. Use a small amount of olive oil or non-stick spray and heat in a small pan. Add pancetta and toast it. Then drain grease and add warm pancetta to the top of the salad. Sprinkle salt and pepper on top. Toss with dressing if you choose to use it. Done. Voila!
